Pancakes can be a great way to fuel your adventures. We even like them for dinner after a long day out on the trail, plus, its super easy to make the batter ahead and prepare them at a campsite.

Ingredients:
1 cup rolled oats
3/4 cup shredded coconut
1/3 chocolate chips
2 TBSP chia seeds
1/2 cup (about 2 scoops) protein powder
3/4 cup creamy peanut butter
1/4 honey or maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
2-4 TBS water if needed
Instructions:
Add all the ingredients to a large mixing bowl. Use a spatula or your hands to mix the ingredients thoroughly.
Roll into bite sized balls
Place the energy bites in an airtight container and store in the fridge until ready to eat.
